Best Low Carb Diet Recipes


I've been a low carb dieter for 9 years, and have had to get creative with inventing new & exciting meals. I'll be adding more in the future, but these are three especially good recipes that friends have begged me to share, so here they are!


3 Favorite Low Carb Recipes:


Blue Cheese Burgers


Asparagus & Ham Appetizers


Stuffed Mushrooms





Blue Cheese Burger
Carb Count: 3 – 15 (3 if you have no bun, 15 for half of a bun)
Serves 6

In a large bowl, mix the following ingredients together:

2 lbs ground beef
1 Large chopped onion (either red or white)
1 Package of Blue Cheese (12 oz)
3 Cloves finely chopped garlic
¼ Cup powdered Hidden Valley Ranch Salad Dressing Mix
1 Egg (This isn’t necessary, but it does help hold the burgers together)

Now you’re ready to form the burgers into patties and put on the BBQ
Spray the BBQ grate with a cooking spray like Pam
Cook on Medium-High heat, around 450 degrees.
Cook each side for 4 minutes until the burgers are cooked to your liking.
For thick burgers, medium-rare takes about 8 minutes. Well done takes about 14 minutes.

If you like, you can top with additional crumbled blue cheese or cheddar and bacon. These are delicious eaten plain with condiments such as mayo, catsup, and mustard and no bun. If you really want to have the bun, do an open faced sandwich on just half a bun – now you have a delicious meal with only a few carbs!



Asparagus & Ham in Bechamel Sauce
Carb Count: 3 carbs per 6 pieces of Asparagus
Serves 20

You will need:
2 bundles of asparagus
2 large packets of thin-sliced deli ham.

For Sauce, you will need:
1 ½ cups milk
2 Tbsp butter
2 Tbsp flour
1lb shredded cheddar cheese
Pinch of Nutmeg
Salt & Pepper


Wash each Asparagus spear and snap off the tough ends.
Wrap each piece of Asparagus in a thin-sliced piece of deli ham

Place the wrapped spears in a long baking dish
Pre-heat oven to 400°

In large saucepan over medium heat, melt 2 Tbsp butter.
Add 2 Tbsp flour and whisk quickly until well blended.
Gradually stir in 1 ½ cups milk, stirring constantly until sauce begins to boil and thicken.
Gradually stir in 1lb cheese
Add ½ tsp nutmeg, ½ tsp salt, and pepper to taste.
Simmer over very low heat for 5 minutes until it thickens to a medium consistency.

(If you’re sensitive to milk, soy milk can be used in place of regular)

Pour the cheese mixture over the wrapped asparagus and bake for 25-30 minutes.



Stuffed Mushrooms
Carb Count: 0
Serves 10


This is one of the most popular appetizers ever. When there's a party or potluck, people beg me to make these mushrooms!

You will need:
1lb medium sized mushrooms
1 roll of raw Jimmy Dean Sausage – Original Flavor
1 package of Philadelphia Cream Cheese
Garlic (either fresh or pre-chopped)

Prepare mushrooms by washing each one and removing the stem.
Sometimes, the stems can be tricky to remove, but the best method is to gently twist the stem in a circle until it pops out.
Arrange mushrooms (missing stem side up) into a baking dish
Pre-heat oven to 375°

For stuffing mixture:
Add ¼ cup water to a large skillet.
Add the entire package of Jimmy Dean Sausage and 2 cloves chopped garlic.
Season with ½ tsp salt and a few sprinkles of pepper.
Brown on medium-high heat until sausage is well done and no longer pink – about 20 minutes.
Over medium-low heat, stir in entire package of Cream Cheese until it is melted.

Now you’re ready to stuff the mushrooms!
Using a tablespoon, scoop the mixture into each mushroom cap.
Once all of the mushrooms are stuffed, pour ½ cup water into the corner of the baking dish, being careful to not get the water inside the stuffed mushrooms.
Bake at 375° for 30 minutes, or until mushrooms are tender to your liking.

**This also makes a delicious vegetarian appetizer if you replace the Jimmy Dean Sausage with a roll of vegetarian sausage.
